What is the proper etiquette for eating lamb chops?

When ever we have lamb or pork chops my husband picks up the chop with his hands and starts to eat it without cutting it up. He says that in the book of etiquette it says that it is perfectly acceptable to pick up a chop like this.
Is this true, for I cannot see how it can be proper etiquette eating something that is larger than a burger, smothered with gravy so it is running down his arm.
